Prepare the infused butter: In a small bowl, mix the Ladismith Spreado butter with the crushed garlic and herbs.
Assemble the sandwich:
Spread a thin layer of the infused butter on one side of each slice of bread.
On the unbuttered side of one slice, layer the brie cheese, tomato slices, and crispy bacon. If using, add optional basil or rocket – to add now as well.
Top with the second slice of bread, buttered side facing outward to form the sandwich.
Cook the sandwich:
Heat a skillet or griddle over medium-low heat.
Place the sandwich in the pan and cook for 3-4 minutes until the bottom is golden brown and toasted.
Carefully flip the sandwich and continue cooking on the other side until it is also golden brown and the brie is melted and gooey, another 3-4 minutes.
