Ingredients
4 slices of hearty sourdough bread
1 cup shredded roasted chicken
4 slices gammon
4 slices of Ladismith’s Gouda cheese
A quick, sweet-tart apple chutney (recipe below)
Slaw: A simple crunchy slaw (recipe below)
For Toasting: Butter for the outside of the bread
1 large tart apple (e.g., Granny Smith), cored and finely diced
1/4 small onion, finely diced
2 Tbsp apple cider vinegar
1 Tbsp brown sugar
1 tsp fresh grated ginger
a pinch of salt
1 cup shredded green or red cabbage
1/4 cup shredded carrot
1 Tbsp mayonnaise
1 tsp apple cider vinegar
a squeeze of lemon juice
salt and pepper to taste.
Method
Prepare the Apple Chutney
This can be made ahead of time and refrigerated.
In a small saucepan, combine all the ingredients.
Bring to a simmer over medium heat, then reduce heat to low and cook, stirring occasionally, until the apples are soft and the mixture has thickened, about 10-15 minutes.
Remove from heat and let it cool.
Prepare the Crunchy Slaw
Mix the slaw just before assembling to maintain maximum crunch.
In a bowl, toss the cabbage and carrot together.
In a separate small bowl, whisk the mayonnaise, apple cider vinegar, lemon juice, salt, and pepper.
Pour the dressing over the cabbage mixture and toss to coat.
Assemble and Toast the Sandwich:
Generously spread butter or mayonnaise on one side of each slice of bread.
On the unbuttered side of two slices of bread, layer the ingredients in this order:
A slice of Gouda cheese
Roasted chicken
Gammon slices
A generous spoonful of the apple chutney
A layer of the crunchy slaw (place on top of the chutney to create a moisture barrier from the bread
Top with the remaining slice of bread, buttered side facing outwards.
Cook:
Heat a skillet or frying pan over medium-low heat.
Place the sandwich in the pan and cook for 3-4 minutes until golden brown on the bottom.
Carefully flip the sandwich, gently pressing down with a spatula. Cook for another 3-4 minutes on the second side until golden brown and the cheese is thoroughly melted.
To ensure the cheese melts perfectly, you can cover the pan loosely with a lid while cooking.
